Abstrak

Foodborne illnesses are often caused by poor food hygiene and environmental sanitation. Tofu factories, as home industries, generally do not have waste treatment facilities due to cost constraints. This study aims to determine the relationship between knowledge and attitudes toward hygiene and sanitation in tofu production at the Nunang Tofu Factory in Takengon. This is an analytical study with a cross-sectional design. The study population consisted of all factory workers, totaling 37 individuals, with all participants included in the sample (total sampling). The study was conducted from July 15 to 25, 2024, using a questionnaire as the data collection instrument. Data analysis was performed using the Chi-Square test with a 95% confidence level. The results of the analysis showed a significant relationship between knowledge and hygiene and sanitation in tofu production (p = 0.002), as well as a significant relationship between attitude and hygiene and sanitation (p = 0.002). These findings indicate that workers' knowledge and attitudes influence the implementation of sanitation hygiene in the tofu production process. Therefore, it is recommended that tofu factory workers improve the implementation of hygiene and sanitation while working to prevent bacterial contamination and protect consumers from the risk of illness due to unhygienic food.
